Gary and I are back from South Padre Island (Texas) and getting back in the snow-shovelling mode.
The Texas Gulf Coast weather was wonderful, all the folks were friendly (there sure were a lot of Canadians down there), and the salt-water pool at the Palms Resort Motel was super-heated so I swam early early in the morning and even on windy overcast days.

We're really looking forward to our big day and recommend that you reserve your tickets soon.

The morning will be a workshop format, led by Sue Minns: "Lions, Tigers & Bears!" Sue will present a hilarious, thought-provoking session that will share accounts of her diagnosis of MS, breast cancer, job loss, and a family house fire, and how she chooses to meet trials head on. She will leave you with a fresh vision and new tools for surviving and thriving through life's little annoyances and big obstacles.

We'll have a great lunch followed by an afternoon presentation by "My Sister's Place" entitled "Living On The Edge". These courageous ladies will offer their stories that will make you laugh, make you cry, and make you think.

Six Degrees Could Change the World

If you didn't catch the show 'Six Degrees' that showed the impact of each average degree of warming upon our home planet, then go to this National Geographic website. There you will find videos from the show and more links to all sorts of informative pages that give ideas on what we all can do to slow down this process.

FROM GREAT MEXICAN EATING IN TEXAS

We discovered PANCHOS at Garcia's Restaurant in South Padre Island. We liked them so much we had them twice ... not on the same day though. Here is what the owner told us to do to make them at home.

PANCHOS
Spread out nacho chips on a oven-proof plate.
Cover each chip with a thin layer of refried beans.
Cover all of that with white cheese... Asadero if you can find it.
Heat this combination in the over to just melt the cheese.
Now put a thick layer of pico de gallo (recipe follows),
and avocado cut up into small chunks,
and slices of jalapeno peppers,
and slices of grilled fajita steak.
Dig in and enjoy. These are so much better than Nachos!
Serve with margaritas or your favourite cervezas.

PICO DE GALLO
Dice up 6 roma tomatoes and 1 sweet white onion, chop up 1/4 cup cilantro and combine.
Salt to taste, add some garlic (powder or minced). Add 1/2 cup of water and let it sit for a while.
Use for dip with chips or crackers, put on sandwiches, and keep some for your panchos.
There are lots of variations for Pico de Gallo on the internet.


TO RED HOT EATING IN LOUISIANA

I think I've tried all of these Tabasco Sauces (at the insistance of the hot food lovers in the family) so it was imperative that we travel down to Avery Island in Louisiana to see the place where it is still made. We tasted jalapeno flavoured ice cream, jalapeno flavoured soda pop, raspberry-chipotle tabasco, and sampled Tabasco's own Chili with Meat.
